Chocolate Raspberry Mini Vegan Cheesecakes Recipe

🌱 Ingredients

For the Crust:
  • 1 cup cashews
  • ½ cup almond flour
  • ¼ cup raw cacao powder
  • ¼ cup pure maple syrup
  • 3 Tbsp coconut oil (solid)
  • ¼ tsp sea salt
For the Filling:
  • 1½ cups raw cashews (soaked in warm water for at least an hour and drained)
  • ⅓ cup coconut cream (from a chilled can of coconut milk)
  • ¼ cup coconut oil (melted and cooled)
  • ⅓ cup maple syrup
  • 6 oz raspberries
  • 3 Tbsp lemon juice
  • 1 tsp vanilla extract
For the Drizzle:
  • ½ cup Hu Kitchen gems or dark chocolate chips (melted)

🥣 Instructions

1️⃣ Make the Crust

  1. In a food processor, pulse all crust ingredients until a crumbly paste forms. Be careful not to over-process, as you want some texture.
  2. Line a muffin tin with parchment or silicone liners.
  3. Press the crust mixture into the bottom and slightly up the sides of each liner to form 10-12 mini cheesecakes.
  4. Place in the fridge to chill while preparing the filling.

2️⃣ Prepare the Filling

  1. In a high-powered blender (like a Vitamix), combine all filling ingredients and blend until smooth and creamy. Scrape down the sides as needed.
  2. Pour the filling over the chilled crust in each muffin cup.
  3. Cover and freeze for at least 3 hours or refrigerate overnight to set.

3️⃣ Finishing Touches

  1. Once set, drizzle with melted dark chocolate.
  2. Store in the freezer for up to 3-4 weeks or in the refrigerator for up to one week.
  3. For a softer texture, refrigerate for an hour before serving.
